I have been pronouncing it like sky pee but then I heard a recoding and it sounded like skipe.
So what is the official pronounciation and what does it mean?

I believe it is pronounced "Sky P" where the P is hard. I have heard people refer to it as Skypee and Skip, but I believe they refer to themselves as Sk eye P

Wow I thought it was Sky pea too. Or even skip eeee.
Funny what you learn. Not sure such a poorly pronouncable name is good for a telecommunication company, though.
